1 lb halibut, cut into 4 equal fillets 4 tsp extra virgin olive oil 4 tsp Latin Spice Rub
Lime Mojo Sauce 1/3 cup fresh lime juice 3 Tbsp fresh lemon juice 3 Tbsp diced red onion 1 1/2 tsp grated lime peel 1/4 tspcumin 1 1/2 tsp minced cilantro stems 3 Tbsp water 1/2 tsp sea salt 1/2 tsp oregano 1/2 tsp minced garlic
Prepare Latin Spice Rub. Preheat broiler. Lightly coat a baking sheet with olive oil.
Coat halibut with 1 teaspoon olive oil per fillet. Dust with 1 teaspoon spice rub. Place fish on prepared baking sheet. Broil for 7 to 8 minutes in oven, or until cooked through.
Combine all ingredients for Lime Mojo Sauce in a blender container and puree until smooth.
Serve 1 fish fillet with 2 tablespoons lime sauce.
